Resources for Health and Culinary Professionals

Although beans are grouped with vegetables by numerous government and health organizations, consumer research shows that less than half of Americans think of them this way. Recent research also indicates that education about the unique benefits of beans as a vegetable can be an effective strategy in achieving the 2005 Dietary Guidelines for Americans recommendation that people consume 3 cups per week of legumes, such as beans1. Currently, most Americans need to triple the amount of legumes they eat in order to meet this recommendation.
